Fibre-rich Carrot Lentil Soup

Ingredients
- 1/2tsp Oil
- 25 gm Onion(1/3 medium, chopped)
- 1tsp garlic(chopped)
- 100gm Carrot(1 medium, chopped)
- 1/4tsp Cumin Seeds
- 1/4tsp Turmeric Powder
- 1/4tsp Cinnamon Powder
- 15gm Lentil (masoor dal)(1 tbsp, raw)
- 25gm Tomato(diced)
- Water as required
- 1tsp Lemon Juice(5 ml)
Instructions

Soak the lentil (masoor dal) for 2 hours

Heat oil in a large pot over medium heat. Then sauté the onion and garlic until they turn soft (for about 2 minutes)

Add the spices and continue to sauté for another 2 minutes

Add the carrots and sauté until they turn tender

Add water, diced tomatoes and soaked lentils and stir it well. Simmer on low heat for 10 minutes, or until lentils are tender.

Blend the mixture to create a creamy soup. Serve the soup with fresh lemon juice.
