Hearty & Soothing Chickpeas Soup
Chickpeas are frequently used in the Mediterranean diet as they come with a host of potential health benefits. Chickpeas can improve digestion; help manage weight and since it is rich in protein, it is an excellent replacement for meat for vegetarians and vegans. Here’s something different for vegetarians – a low-calorie and nutrient-packed Chickpeas soup!

Ingredients
- 15gms Chickpeas(raw)
- 1/4tsp Cumin powder
- 10gms Onion(chopped)
- 2inch Celery Sticks(piece)
- 1/2tsp Lemon Juice
- 10gms Tomatoes
- 2-3 cloves of garlic
- Salt to taste
- 1tsp Extra Virgin Olive Oil / regular oil
- Water as required
Instructions

Soak the chickpeas for 3-4 hours, pressure cook and keep them aside

In a saucepan, take olive oil or regular oil and sauté the garlic. Once it’s golden add chopped onions, tomatoes and celery

Cover it with a lid and let it cook till soft

Add cooked chickpeas and water to soup consistency and let it simmer

Add cumin powder and lemon juice. Serve it hot
