What Is A Hobo Foil Packet?

A hobo foil packet is a quick, simple meal solution popular among campers. It’s a bundle of cut-up ingredients that are packed into some foil and thrown on top of the campfire. Don’t have a campfire? No sweat. Let your kids make their own foil pack and pop ’em in your oven for a fun and super simple family night meal.

Sausage And Peppers On Sourdough Crostini Ingredients

  • 1 pound chicken or turkey sausage
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced
  • 1 large sweet onion
  • 8 Crimini mushrooms, sliced
  • Thyme, fresh sprigs
  • Dried Oregano
  • Sourdough bread
  • Marinara sauce
  • Foil

Hobo Foil Packet Directions

  1. Preheat oven to 375.
  2. Remove sausage from casing. Section sausage into quarter-size balls (they don’t have to be perfectly round).
  3. Place sausage, peppers, onion, mushrooms, 1-2 sprigs of thyme, and a dash of oregano on a 10″ foil sheet.
  4. Top with a second sheet of foil and fold edges together to create a packet. Makes about 4 hobo packs.
  5. Place packs on a baking sheet. Cook for 35 minutes.

NOTE: Do not open packets to check them. Removing the steam will slow the cooking process.

Sourdough Crostini Directions

  1. Place 1 tablespoon oil in a pan on medium heat.
  2. Toast each side of sourdough bread.
  3. Serve sausage and peppers on toast with a side of sauce.

Hi friends! Happy Friday. I hope you had a wonderful week. It’s the kids’ Rodeo Break (it’s a Tucson thing!) so it’s been so nice having a break from virtual school and dance classes for the crew. It reminds me of the slower days of summer and I’m LOVING it: sleeping in, taking lots of walks and bike rides, and hitting the pool whenever we wanted. (We might go for a swim this weekend!) I’m going to soak up the next three days. I hope you have a fun and relaxing weekend ahead.

Good eats + fitness:

Blue Apron!! (They’re a partner for the blog and we’ve loved their meals for years.) We enjoyed Blue Apron dinners this week and it really streamlines the evening routine. The meals are always fresh and flavorful, and since the Pilot was gone this week, I got the two-person serving, which is the perfect size for the girls and myself. (The servings are always very generous!) For all of our dinners, I’ll often cook the rice or chop veggies during the day so that I only have to do a couple of steps during the dinner rush. (When the kids are hangry and start invading the pantry for bars and snacks, it’s so helpful to get dinner done FAST.)

We LOVED this chicken curry with rice. I cooked the rice in the Instant Pot and had pre-chopped the veggies, so it was on the table in 15 minutes.

We FINALLYYYY updated our dishes and silverware for the first time in our marriage. After much deliberation, we went with the Mercer collection and this silverware. We’re happy with the change and I have to say, it’s super weird to open the pantry and all of the dishes match, instead of the hodge lodge days of yore. #adulting. The low bowl is definitely the most-used option; it’s the perfect size for giant salads, or any type of curry or bowl meal.

(This was a Mediterranean-style bowl from a baby meal I made last weekend and it was a dreaaaam.)

I’m almost done with the Britney documentary and thank you to those of you who helped me find it! (It’s on Hulu under New York Times Presents. I thought it was a standalone documentary and that’s why I couldn’t find it!) So far, it’s super sad and has also made me remember all of the reasons why I love her.

This Light Stim for Wrinkles. It’s been in its little pouch for a long time, but I finally decided to give it a whirl. I’ve been using it at night while reading, and while I don’t notice a HUGE difference, my skin does feel smoother. (Apparently it can take up to six weeks to really see results.)

People oftentimes think the best workouts cause the most soreness and pain.

Or, the most effective diets bring about the most discomfort and misery.

Why do we believe better health requires constant suffering?

Change can be associated with pain, but it’s not measured in soreness or restriction.

Some workouts will make you hurt. Some diets will make you hungry. But, these adjustments should be — for the most part — temporary.

When you start from scratch, begin a new plan, or have taken time off, almost anything you do can create friction or discomfort. And that’s OK.

Growth is a byproduct of adaptation. You are built to adapt, learn, improve, and become more efficient. It’s a part of evolution.

But, when you evolve, the hard becomes familiar. It’s how you survive and thrive.

If you live in the darkness, turning on a light is painful.

But, that doesn’t mean you’re meant to stay in the darkness.

Once you’re in the light enough, the brightness is a welcome relief — not a harsh reaction.

The pain you want comes in the form of awareness.

When you’re on the right path, you see clearly — and that can sting.

When you’re on the right path, you see clearly — and that can sting.

You recognize the bad habits you formed, the health you neglected, or the time that passed without taking action.

Once you adapt to change — like living in the light — the pain will go away. Your awareness soothes.

Good change reduces pain.

Bad change keeps you in it.

If everything you do causes pain, then you haven’t found the light. You’re actually crawling deeper into the dark.
